A mixed up Chicken dish
I've always enjoyed Chinese food. Going to the restaurants and ordering dishes made with different spices and sauces made me always happy for special events.
Except for one time when my mom and I visited St John's Newfoundland in the summer of 1982. The Chinese restaurant that we went to at the time, not too sure what they were thinking of but the decor inside was quite nice. But 1982 Newfoundland I think didn't have a lot of Chinese influence in it. All I remember is Chinese food was frozen Chinese dinners that you get in the supermarket. It was all right but definitely not something that we have been having. I had a similar experience in Nunavut in the local store. The lady who ran the snack bar, Donna had heated up some Chinese food from the freezers to sell for lunch. No one ordered it. I cam through after school and i bought it. It was alright. Not gourmet but hey you got what you could in the north.
Usually this Chinese chicken dish kind of might be of the same way however it didn't come Frozen except for the chicken breast itself which I sort of hacked apart but I believe this one I used some different sauces and things I had inside my fridge so it could have been a Malayan Curry thing that I threw together but I can tell from the from the sauce that it's probably got a little bit of chili oil and some other things in it with some added mushrooms and onions and things like that because I do like to add some vegetables to any dish I make I eventually I think what I did is I serve this on top of either basmati rice or noodles either one would work and when you're just cooking for yourself this is like these can last a couple of meals so hence why I do stuff like this I always add hot sauces to my dishes because I do like the spices I'm seeing as I have a kidney issue and can't use salt in most of my cooking I use a lot of hot sauces now that being said a lot of hot sauce is sometimes are basted with vinegar however I find that the I always watch the sodium level on them anyway and I just like the heat anyway my head just being if my hair isn't sweating it's not hot enough so this is one of those little tiny dishes I threw together and the name of it is basically messed up chicken enjoy.
Take 2 Chicken breasts, slice them up saute in oil or butter. Add a sliced onion, or frozen Asian vegetables Add either a curry sauce or Asian sauce that you like. If you got it add chunky peanut butter and hot sauce. Serve on rice or pasta.
